Mocha Mascarpone Layer Cake



My friend Sirin is actually one hell of an artist – baking artist. Whenever she puts the pics of what she has made, we start drooling :P I’m not cooking or baking but who doesn’t like good food & yummy deserts. Anyway yesterday I shared one of the pics of Sirin’s cake & my sister went nuts over it. So here’s the recipe. Hope you enjoy!


Part one coffee sponge cake
Cake powder 100 gms
Corn Powder 15 gms
Baking powder 1 t sp
salt 1/4 t sp
sugar 90 gms
eggs 3
ovalet 15 gms
espresso 1 tb sp
Milk product for bakery 3 tb spmelt butter 45 gms
bake 180 ๐C around 20 mins in tray size 11*15*1"

Part two coffee syrup ( after cut Sponge cake to many pieces use this syrup to the cake...not too watery..)
espresso 2 tb sp
sugar 50 gms
water 225 gms
boil this all and leave until cold then put
Kahlu'a 1-2 tb sp

Part three Chocolate Mascarpone
3.1Jellatine 1/2 t sp
water 2 tb sp
melt jelatine and leave to warm

3.2whipping cream(non-diary) 2/3 cup
spin until stiff-peak and leave in refrigerator

3.3sugar 60 gms
coco powder 15 gms
custard powder 20 gms
vanilla 1 t sp
yolk 2
fresh milk 50 gms
double boiler

Mascarpone cheese 200 gms
spin until like cream around 3 mins
mix with 3.3
then 3.2 and 3.1

making cake

sponge cake with syrup on and then Chocolate mascarpone and sponge cake with syrup again and Chocolate mascarpone and then put coco powder on top (make in round or square box until it set) decorating like you want
put in refrigerator over one night until mascarpone sets
